This classic method is obtained from Pinot Noir grapes (100%) from vineyards located at altitudes between 300 and 450 m asl in the Versa Valley. The crops have a low environmental impact with grassing of the land and no use of herbicides. No irrigation or inorganic fertilization. The harvest is manual with harvesting in boxes in the second ten days of August. A soft and progressive pressing of the bunches is carried out with fractionation of the musts; alcoholic fermentation in steel vats at controlled temperature (17-19 ° C) with selected yeasts. Tirage in the spring following the harvest. Second fermentation in the bottle and aging on the lees for at least 30 months. At disgorgement the bottle is filled with the base wine. The sparkling wine ages in the bottle for at least 2 months. The color is straw yellow with an elegant perlage, floral notes of acacia and white fruit stand out on the nose, and on the palate it has a good structure supported by a remarkable acidity. Long persistence finish.
