The harvest takes place in the second decade of October, the selection of the grapes and the harvest are manual. The grapes are then left to macerate at a temperature of 25 ° C until the alcoholic fermentation is completed; it is then pressed softly, with horizontal presses. At the end of the alcoholic fermentation the wine is decanted and left to rest in masonry wine vessels for 10-12 months. Bottled, it is refined for 1 month before release. It has a ruby red color, the scent is intense, fragrant and persistent. The flavor is rightly harmonious, well balanced, with a marked typicality of Gaglioppo.
