The grapes from a careful selection in the vineyard are harvested after the middle of September. The grapes remain in the press for the time necessary to extract the aromatic scents present in the skin of the berries. The clean must then ferments at a controlled temperature in small steel containers.
The wine has a straw yellow color with greenish reflections, a pleasant, fruity, floral and slightly aromatic scent with hints of wild sage. The taste is dry, with a pleasant sour note.
