Creamy foam with fine and continuous perlage. Orange peel color. Fine and intense bouquet, complex and slightly spicy. Full harmonious taste with good sapidity that blends typically fruity notes with a minerality conferred by the territory. The grapes are first subjected to soft pressing, then the must obtained is sent for refermentation in the bottle on the yeasts where the wine rests for at least 36 months.
At the end of the first alcoholic fermentation, in order to give the wine a greater softness and complexity, the development of a malolactic fermentation is facilitated. A period of refinement is followed by bottling for refermentation in the bottle on the lees. Produced from pinot noir grapes grown in the high hill areas between 400 and 600 m asl on the slopes of Monte Baldo in the areas of Besagno, Crosano, Cazzano and Castione.
